Recipe: Soup: 1 medium butternut squash 1 tbsp vegan butter or oil of choice 1 small or 1/2 of a large apple 3 cups of filtered water + 1/2 tbsp veggie base or 3 cups vegetable broth 1/2 tsp ground ginger Pinch of cayenne pepper Salt and black pepper to taste Chickpeas: 2 cups chickpeas, rinsed and patted dry 1 tbsp avocado oil 1/2 tbsp curry powder or spice of choice 1 tsp turmeric Salt to taste _________________________ Preheat oven to 400 F / 200 C. Cut butternut in half, take out the seeds and lightly salt it. (Optional: spray it with a bit of avocado oil first, then salt it) Place it cut side down on a lined baking sheet. Toss chickpeas with oil and spices and put them in a large baking dish or on a second lined baking sheet. Bake everything for 40- 45 minutes. The butternut should be fork tender and charred on the bottom. Chickpeas will crisp up even more once they cool down. In the meantime, peel and core apple, and roughly chop . Heat up vegan butter in a large skillet (medium heat), add apple pieces and saute until lightly browned. When butternut is done, let it cool down enough to handle, then scoop out all of the flesh.Add that to a high speed blender along with the apple and veggie broth and blend until very smooth. Transfer soup to a pot to heat up and season with ginger, cayenne and black pepper and salt if needed. Depending on your preference, you can add a bit more water to thin out the soup. "In the very beginning of classes, I have different themes that I work with depending on the class. Let’s say we’re working with injury. I would give the students a few moments to scan their body using their breath, like they would use fingertips to feel inside for an area that’s crying out for help. It could be a heartbreak, or it could be a low back injury, or a headache. Once students connect with that, we start questing for moving the breath through that area. We keep that focus for the entire practice session. (Pudding mixture) 200g cooked Japanese pumpkin/ butternut squash or unsweetened pumpkin puree 1.5 cups (360ml) choice of plant milk 40g cashews (soaked in water for 2-4 hours or soaked in hot water for 20 minutes, rinsed) 5 Tbsp. maple syrup or liquid sweetener 1/2-1 tsp cinnamon or pumpkin pie spice 1/2 tsp (1.5g) agar agar powder (can be reduced down to 1/3 tsp (1g) if you like a softer texture. Adjust the amount according to your preference) 1 tsp vanilla bean paste (Caramel) 3 Tbsp. coconut sugar (Other) Coconut whipped cream or plant based whipped cream Method 1. To make the caramel, place 3 Tbsp. coconut sugar and 1 Tbsp. water in a small saucepan. Cook over medium-high heat. Stir frequently until the sugar is dissolved. Once you find small bubbles on the edge, keep it bubbling for 90 seconds. Keep your eyes on it as to not let it burn. 2. Immediately remove from the heat and coat the bottom of each jar with about 1.5-2 tsp of the caramel. Chill them in the freezer while preparing the pudding mixture. 3. In a high speed blender, place all the ingredients except agar powder and blend well until smooth. Add more sweetener if you wish. 4. Pour it in a sauce pan and add agar powder and mix well. Gently bring to a boil and simmer while stirring constantly over medium heat for about 3-4 minutes or until thickened. 5. Strain the mixture and pour into the prepared jars over the caramel. Chill in the fridge. Serve with your choice of plant based whipped cream.
